I’ve been in a Mexican food craze lately, and since Cinco de Mayo is quickly approaching, I thought I’d pull together a list of delicious Mexican Foods from some of my favorite bloggers that you can easily prepare at home. I hope you enjoy this Mexican Food Round-Up as much as I’ve enjoyed gathering together these recipes!
I seriously don’t even know where to begin with these recipes. There’s everything from breakfast to dinner, sauces and snacks, homemade tortillas and popsicles. Some of the recipes are what I consider to be fairly authentic, others a little less so. All of them delicious!
Above ^^ you find Pollo Fundido Cups (top left) from Meatloaf and Melodrama. I can’t wait to give these a try, they look & sound like the perfect “little” mexican dish! I can see them served as an appetizer, or even as a main dish along with a side Caesar Salad. Top right, you’ll find my Beef & Bean Baked Burritos. Seriously folks, I’m not kidding you when I say these are the best homemade burritos! I make them all them time now, and the best part is that you make them with leftover steak (or chicken) and Homemade Refried Beans. Bottom left, you’ll find some tasty looking Homemade Flour Tortillas from A Sweet Pea Chef. I’ve yet to try making homemade tortillas, but I guarantee that I’ll be making them soon. Very very soon! Seriously, how good do those tortillas look? Bottom right ^^ check out the Healthier Oven Baked Tacos by Strawberry Blondie. These are sure to please all taco lovers!
Below, check out the sandwich brought to you by Karen’s Kitchen Stories. Karen is truly a crazy lady when it comes to homemade bread and puts me to shame. This Cemita Poblana w/Pork Milanese is layered with flavors from the bottom bun to the top! If you’re looking to start your day, the Mexican food way, you need to check out these Huevos Rancheros from What a Girl Eats. I’m a huge fan of Huevos Rancheros, especially when enjoying breakfast on the beach in Cabo San Lucas. Tracy from Served From Scratch, shared her Chicken Fajita Burrito Bowl with us. You need to check out, not only this recipe, but her entire list of recipes. Just as you would expect from he name of her site, she makes everything from scratch. Her blog is definitely one of my “go-to’s.” I mentioned my Homemade Refried Beans when I talked about my Beef & Bean Baked Burritos. I’m here to say, that once you make them from scratch, you won’t be opening a can of beans again. And lastly, in this photo collage, are Paletas de Fresas (Strawberry Popsicles). Oh my sweet goodness! Right? Strawberries, milk, cream, and a little sugar and you’ve got yourself a homemade popsicles that everyone is going to love.
How about a Chorizo Enchilada Stuffed Poblano Pepper? I’m imaging this on my dinner plate very soon! It just screams flavor! Thank you Food Huntress for tempting me with this deliciousness! We’re huge fans of Chicken Tortilla Soup in my house. Nothing beats a large hot bowl of Tortilla Soup with all the toppings! Like Mother Like Daughter shared their Crockpot Chicken Tacos, and if you ask me, there is nothing better than a crockpot meal. Some days are just too busy to cook, and these tacos are sure to please the entire family after a busy day. And, if you’re looking for something a bit lighter, try this Taco Salad from Gluten Free Foodsmith. It looks delicious! Now that the weather is summer-like, we’ll be enjoying this soon (eating out on the deck of course).

I love breakfast burritos, and these Papas con Huevos from The Kitchen Gidget won’t disappoint! I think I know what I’m making next weekend 🙂 I recently made up a batch of Homemade Enchilada Sauce, but headed out of town and ended up by placing it in the freezer. I can’t wait to get home and make up a big pan of chicken enchiladas. Luckily, I think I have enough sauce to also make a delicious meal of chilaquiles. Talking about enchiladas, these Enchilada Verdes from Organized Island have been calling my name since I first set eyes on them. Have you ever gotten corn on the cob at the fair? It is seriously the best, but it’s so messy to eat! I decided to re-create it, and make it easier to enjoy. And enjoy it you will! It’s got all the great flavors: roasted corn, cheese, lime, but it’s simple to eat!d I hope you’ll give my Fair Corn a try!
Are you still with me? Only four more recipes to go! I cannot believe that I actually have **21** recipes in this Mexican Food Round-Up! Wow, that’s almost a months worth of recipes!
Ok, let’s get this finished 🙂 How about a 4 Ingredient Healthy Chicken Enchilada Casserole? The Seasoned Mom used a purchased enchilada sauce, and just a few other ingredients for this quick and easy meal. I wonder how it will taste with my homemade Enchilada Sauce? Shrimp is a popular ingredient in Mexican food, and these Chipotle Lime Shrimp Tostadas from The Square Plate certainly has done these right. Shrimp and lime and chipotle? Yes please! Show Me the Yummy shared her Pico de Gallo with us, and I have no doubt that it truly is yummy! And lastly, but certainly not least is Pork Chili Verde from Onion Rings and Things. Warm up some tortillas and get ready to enjoy her recipe.
Pfffew, I think it’s time to open a cold Corona and enjoy some Mexican Food!
