Are you looking for something quick and easy and healthy for your little ones? Something perfect to feed them before Trick-or-Treat? Look no further, this Simple Chili truly is (perfect for the kiddos). Halloween this year falls on a Monday. And that means, school and school parties or costume parade, possible after school sports, and maybe even a little homework. Make this Simple Chili the day before and all you’ll have to do is reheat it. Or throw it together quickly in the morning, and it will be ready and waiting for your little princesses, ghosts or ghouls when they’re ready to eat!!
I’m not sure about your family, but I have six little grandchildren and they all love beans!! Ok, five of them do, I can’t count our newest little one yet (she’s only 4 weeks old). Serve this healthy and delicious chili topped with a little cheese, a blueberry cornbread muffin, and a side of fruit (or carrots) and your little ones will be fueled up on a healthy meal BEFORE the candy rush!!
And guys, you need to make up a batch of these Blueberry Cornbread muffins to go along with the chili. Seriously!! All I did was use packaged corn bread mix (Marie Calendars is my favorite) and added about a cup of fresh blueberries. Amazingly delicious!
I need to be honest here, this is Simple Chili. It’s meant for the kids to enjoy. It’s quick, healthy, and delicious, but I backed down on adding extra tomatoes and veggies (I did sneak in a little corn) and purposely kept it flavorful, but not too spicy. For the adults, you’ll want to top it with a big spoonful of your favorite salsa, or some fresh chopped red onion, avocado, and sour cream. Or, if you’re like me, and plan on a houseful on Trick-or-Treat night, put on a crockpot of zestier chili for the adults, such as my Turkey Chili w/White Beans or my Sweet Potato Chili for the vegetarians.
Simple Chili (perfect for the kiddos)
Ingredients
- 1 # ground turkey
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 4 cans beans I used 1 pinto, 1 black, 1 kidney, 1 white
- 1 cup crushed tomatoes
- 1/2 cup water
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp cumin
- 1/4 tsp oregano
- 1/2 tsp chili powder
- 1 cup frozen corn
- Grated cheese for topping
Instructions
- In large deep skillet, brown ground turkey, season with 1/2 tsp salt, pepper, and garlic powder.
- Drain beans.
- To cooked ground beef, add: beans, tomatoes, water, and all seasoning.
- Stir until well mixed.
- Heat on med/high until it reaches a low boil.
- Reduce heat and simmer for approx. 30+ minutes.
- Add frozen corn and heat for another 30 minutes.
- Top with grated cheese and serve.
